Recipes from Hell's Kitchen S1E5: Lobster Butternut Squash Risotto

Christina Wilson(前地狱厨房冠军、现地狱厨房副厨)在YouTube上有10个演示HK经典食谱的视频,视频下附有非常详细的文字食谱,供大家参考。本食谱需要配合视频使用。食谱为4人份量。

Lobster Butternut Squash Risotto(龙虾南瓜烩饭)

Ingredients:

-8oz Lobster Knuckle and Claw Meat

-2ea 4oz Lobster Tails, cut in half

-2cups Arborio Rice, cooked to package specifications

-1ea Shallot, small diced

-8oz Butternut Squash, small diced and blanched

-8oz Butternut Squash Puree

-4oz White Wine 

-8oz Parmesan Cheese, grated

-16oz Chicken Stock, more if needed

-2oz Olive Oil

-4pieces Fried Sage (Garnish)

材料:

-8盎司     龙虾关节和钳子肉 

-2条         4盎司龙虾尾,对半切开 

-2杯         意大利米(没有的话,用做寿司的短粒米也可以,米一定要是短粒的) 

-1块         红葱头,切小块 

-8盎司     南瓜,切小块,焯水 

-8盎司     南瓜泥

-4盎司     白葡萄酒 

-8盎司     帕玛森芝士,磨碎 

-16盎司   鸡肉高汤 

-2盎司     橄榄油 

-4片         炸鼠尾草(作为配菜)

BUTTERNUT SQUASH PUREE(南瓜泥)

-1ea Butternut Squash, cut in half, seeds removed

-¼# Butter, unsalted, room temp

-1C Heavy Cream, heated through

-½ C Whole Milk

-TT Salt 

Place squash face down on sheet tray and roast at 350 degrees until fork tender. Remove from oven and scoop out flesh. Place squash in blender and add heavy cream and milk to loosen to desired consistency. Season to taste with salt. Reserve for risotto.

材料:

-1个       南瓜,对半切开,去掉南瓜籽 

-1/4条    室温无盐黄油 

-1杯       淡奶油,煮热(美国的重奶油的脂肪含量和国内的淡奶油相近)

-半杯     全脂牛奶 

-适量     盐

步骤:

1、南瓜切面朝下放在烤盘上,350华氏度烤至变软;

2、出炉,挖出南瓜肉;

3、将南瓜放入搅拌器,加入奶油和牛奶,打至需要的质感;

4、用盐调味;

5、放置备用。
