Recipes from Hell's Kitchen S1E4: Crispy Skin Salmon with Fennel Puree Recipe

Christina Wilson(前地狱厨房冠军、现地狱厨房副厨)在YouTube上有10个演示HK经典食谱的视频,视频下附有非常详细的文字食谱,供大家参考。本食谱需要配合视频使用。食谱为四人份。

CRISPY SKIN SALMON(脆皮三文鱼)

Ingredients:

-4 6oz pieces Salmon

-2ea Confit Fennel

-20ea 16-20 Count Shrimp

-4oz Vegetable Stock

-8ea Fennel Sprigs (Garnish)

材料:

-4块        6盎司三文鱼 

-2块        油封茴香

-20个     16-20 count 虾(就是每磅有16-20只的虾子)

-4盎司    蔬菜高汤 

-8束       茴香枝,装饰用

步骤:

FENNEL PUREE(茴香泥)

-2ea fennel sliced on mandolin

-1/4 T fennel seeds

-1ea lemon juiced and zest peeled

-2oz butter + 2oz extra butter

-1tsp salt

Sauté fennel, fennel seed, 2oz butter and salt in a pan with a lid on. Add lemon juice and peel to the pan. Continue to cook/stir till the fennel is soft with the lid on. Once soft take off heat with the lid still on, blend with the extra 2oz butter. Finish by passing through fine mesh strainer

材料:

-2块            茴香,用切片机来切 

-1/4汤匙     茴香籽

-1个            柠檬,皮削下来,汁挤出来 

-2盎司        黄油 

-2盎司        额外黄油 

-1茶匙        盐

步骤:

1、锅里加入茴香、茴香籽、2盎司黄油、盐,加盖来炒(估计是说盖上盖子后晃动锅子);

2、加入柠檬汁和柠檬皮;

3、加盖,煮至茴香变软,期间不断搅拌;

4、变软后,保持加盖状态,离火,把茴香放入搅拌机,额外加入2盎司黄油,打成泥;

5、将茴香泥过一下滤网。


BRAVA SAUCE(布拉瓦酱)

-4ea Shallots Finely Sliced

-2ea Cloves Garlic Sliced

-2T Paprika

-16oz Chopped Tomatoes

-8oz Mayo

-1oz Siracha

Sauté the shallot and garlic in a pan with a lid on. Add the paprika and let it cook out. Add the tomato and reduce. Blend and chill. Pass through chinois. Combine siracha and mayo and add to sauce.

材料:

-4块        红葱头,切碎 

-2瓣        大蒜,切碎 

-2汤匙    红椒粉 

-16盎司  番茄,切丁 

-8盎司    蛋黄酱 

-1盎司    Siracha辣椒酱

步骤:

1、加盖状态下炒红葱头和大蒜;

2、加入红椒粉,煮透;

3、加入番茄,收汁;

4、打成酱,冷却;

5、过漏勺滤一下酱汁;

6、加入辣椒酱和蛋黄酱,混合均匀。

CONFIT FENNEL(油封茴香)

-2ea Heads fennel cut into 8, outer shell removed

- ½ pound Butter, unsalted

-8oz water

-2ea Lemons, juiced and zested

-1tsp Salt

Add everything to a pan in one level. Cook on medium to high heat with a lid on until the fennel is soft. Remove lid and reduce liquor till glazing consistency.

材料:

-2块      茴香头,切成8块,去掉外皮 

-1/2磅   无盐黄油 

-8盎司  水 

-2个      柠檬的汁和屑 

-1茶匙   盐 

步骤:

1、把所有东西放进锅里,摊平;

2、用中高火,加盖煮至茴香变软;

3、揭盖,收汁至有光泽的状态。
