Since cilantro is so polarizing, why would a restaurant even put it in a dish? If it's not listed as an ingredient on the menu and I tasted it, I'd be very angry. To me, it's like eating drain cleaner.

The ability to taste coriander and the lovely herb that it is is genetic. About 80% of the population get the nice taste of it. The unlucky 20% taste soap.
So as one of the 80%, I’d hate to do without it because a minority can’t taste it properly. Menus should list it and as far as I know (e.g. carrot and coriander soup - the clue is in the name) generally do.

Polarizing would be if there were a somewhat equal number of people on each side. This is not that case. And you know, you can like, talk to the waiter.

I love cilantro. You have reminded me to go out and plant some tomorrow in my garden.
However, I have noticed that not everyone agrees with me. I agree with you that it would be best to explicitly list it on the menu for any dishes that contain cilantro

Are you suggesting that every restaurant contact you to see if you happen to approve of each ingredient in their dishes?
Why would any restaurant even include shrimp in any form? They are very polarizing. They are the bugs of the ocean. If I were served them I’d be very angry!

Because it’s very trendy right now and has a lot of snob appeal, unfortunately. I can’t stand the stuff either; to me it tastes like camphor.

Cilantro is typical of Indian and arabic cuisine (it’s also called arab persil). English and american use a lot of it too. Here in Italy is just unavailable. I don’t like it too much.
