Recipes from Hell's Kitchen S1E9:Scallop Appetizer

Christina Wilson(前地狱厨房冠军、现地狱厨房副厨)在YouTube上有10个演示HK经典食谱的视频,视频下附有非常详细的文字食谱,供大家参考。本食谱需要配合视频使用。食谱为4人份量。

Scallop Appetizer(扇贝前菜)

Ingredients:

-10 ea Scallops, U-10 dry, cut in half

-As Needed Olive Oil

-TT Salt

-12oz Apple Butter Puree

-8oz Tarragon Mayo

-4oz Candied Walnuts

-8oz Celery Apple Salad

材料:

-10个       U-10 Dry扇贝,对半切开

-适量       橄榄油 

-适量       盐 

-12盎司   黄油苹果泥(做法见下文) 

-8盎司     龙蒿蛋黄酱 (做法见下文)

-4盎司     焦糖胡桃 (做法见下文)

-8盎司     芹菜苹果沙拉(做法见下文)

In large sauté pan, heat oil over medium high heat. Season scallops with salt and place in pan. Cook until blonde on first side, approx. 2-3 minutes. Flip the scallops and cook for additional 30 seconds on other side. Remove from pan and place on plate or sheet tray lined with paper towel to absorb any excess oil.

步骤:

1、一个大煎锅,用中高火把油烧热;

2、用盐给扇贝调味,下锅煎;

3、煎至底面金黄,约2-3分钟;

4、翻面,另一面煎30秒;

5、出锅,放在垫了厨房纸的盘子上吸收多余的油分。

注:

1、U-10 Dry扇贝指的是在干燥容器里储存且每磅有10个的扇贝;

2、下锅前的最后一刻才上盐,否则扇贝会出水,发生类似腌制的过程;

3、视频里每面煎1分钟左右。

 APPLE PUREE(苹果泥)

-8 Apples, finely sliced on mandolin

-3cup Apple Juice

-½cup Sugar

-½cup Cider Vinegar

-1tsp Salt

材料:

-8个      苹果,用切片机切薄片 

-3杯      苹果汁 

-1/2杯   糖 

-1/2杯   苹果醋 

-1茶匙  盐

Add all ingredients to a pan with a lid. Simmer until apples are very soft, about 20 mins. Remove lid and rescue liquid. Blend until smooth.

步骤:

1、把所有材料加入锅中,加盖,小火煮至苹果变软,约20分钟;

2、揭盖,滤掉水分;

3、打成泥。

 

TARRAGON MAYO(龙蒿蛋黄酱)

-½ cup Tarragon, finely chopped

-1T Cider Vinegar

-8oz Mayonnaise

-TT Salt and Pepper 

 材料:

-1/2杯    龙蒿,细细切碎 

-1汤匙   苹果醋 

-8盎司   蛋黄酱 

-适量     盐和黑胡椒

Combine all ingredients. Season to taste.

步骤:

混合所有材料,根据需要调味。

CANDIED WALNUTS(焦糖胡桃)

½ cup Sugar

1 ½ cup Walnuts

1cup Water

1 tsp Salt

1ea Cinnamon Stick

材料:

-1/2杯    糖 

-1.5杯    胡桃 

-1杯       水 

-1茶匙   盐 

-1段       肉桂

Bring all ingredients to a boil in saucepan. Allow for a syrup to form. Strain the walnuts from the liquid and bake at 325 for 10 minutes on a wire rack. 

步骤:

1、把所有材料放入锅中,烧沸;

2、收汁至糖浆状态;

3、滤掉液体,把胡桃在烤箱里用325华氏度烤10分钟。
